I have a bunch of red peppers I needed to use, so I tried these stuffed peppers- It was a recipe I found on allrecipes.com, and I read some of the reviews and modified it a little. They turned out quite good!
Ingredients:
1 cup water
1/2 cup rice
2 garlic cloves
2 large peppers
1/2 lbs ground beef
1/4 lbs sausage
1/2 an onion finely diced
1/2-3/4 can of tomato sauce
1 tsp cumin
black pepper to taste
salt to taste
1 cup mozzarella cheese
- In a medium saucepan, bring water to a boil. Add rice and finely chopped garlic cloves and stir. Reduce heat, cover and simmer for 20 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Blanch peppers
- In a large saucepan over medium heat, brown the ground beef; drain. Return to heat and mix in onion, cooked rice, garlic powder cumin, salt and pepper. Pour in tomato sauce and mix thoroughly. Let simmer for about 10 minutes. Remove from heat and add cheese.
- Spoon the meat mixture onto each half of the green peppers. sprinkle some more cheese on top. Bake in the preheated oven for 35 minutes or until mixture begins to turn golden brown.
